| The most recent of the Vail Valley Foundation’s educational initiatives, Sowing Seeds focuses on the scientific aspect of teaching children about how foods grow, as well as the accompanying nutritional message of eating healthy. Created in conjunction with chef Kelly Liken of Restaurant Kelly Liken, at Brush Creek Elementary School, the Sowing Seeds program involves a greenhouse project where students plant and care for their own gardens. The program not only connects children to their environment, but also fosters an understanding of the origin of food and teaches responsibility through stimulating hands on activities. The vegetables grown in the Sowing Seeds greenhouse have been integrated into a cafeteria school lunch program and students are saving their lunch scraps to add to the composting stations in the greenhouse. During the summer students sell their produce at a local farmer’s market. Sowing Seeds serves over 800 students and expanded to Edwards Elementary in 2011, with continued growth in the future! | ||
